This Cranberry Chickpea Mashed sandwich is not only packed with fiber, it’s such an easy lunch recipe that the whole family will love! It’s absolutely perfect as an easy meal prep recipe since it takes, like, 10 minutes to make and requires absolutely no cooking, AND you can serve it in a sandwich, in a wrap, with lettuce boats or crackers!

INGREDIENTS
▢ 540 ml canned chickpeas, drained and rinsed
▢ 3 tbsp vegan mayo, or regular
▢ 1/3 cup chopped walnuts
▢ 3 ribs of celery, diced
▢ 1/4 red onion, diced
▢ 1/3 cup unsweetened dried cranberries, sweetened also works
▢ 1/4 cup chopped parsley
▢ 1 tsp garlic powder
▢ 1 lemon, juiced
▢ 3/4 tsp salt
▢ 1/4 tsp pepper
▢ 8 slices of bread, toasted

Instructions
Add the drained and rinsed chickpeas to a large bowl and mash with a potato masher or fork until mostly mashed, leaving a few chickpeas intact for texture. Add the remaining ingredients to the bowl and mix together until well combined. Toast the bread and serve in a sandwich, or in a wrap, with crackers or in a lettuce boat and enjoy!
