🧁 Healthy Pumpkin Banana Bread
Ingredients
Wet:
• 1 cup mashed ripe banana (about 2 medium or 3 small) 🍌
• 1 cup canned pumpkin purée (not pumpkin pie filling) 🎃
• 2 large eggs 🥚
• 2–3 tbsp maple syrup or honey (adjust for sweetness) 🍯
• 1 tsp vanilla extract
• ¼ cup Greek yogurt (or unsweetened applesauce)

Dry:
• 1 ½ cups oat flour (or blend rolled oats in a blender)
• ½ cup whey or plant protein powder (vanilla or unflavored)
• 1 ½ tsp baking powder
• ½ tsp baking soda
• 1 ½ tsp cinnamon
• ½ tsp pumpkin pie spice (or more to taste)
• Pinch of salt

Optional add-ins:
• ¼ cup chopped pumpkin seeds, walnuts or pecans
• ¼ cup dark chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
2. In a large bowl, whisk together mashed banana, pumpkin purée, eggs, syrup, vanilla, and Greek yogurt.
3. In another bowl, mix oat flour, protein powder, baking powder, baking soda, spices, and salt.
4. Combine wet and dry ingredients until just mixed (don’t overmix).
5. Fold in nuts or chocolate chips if using.
6. Pour batter into loaf pan and bake for 35-45 minutes, or until a toothpick comes out clean.
7. Let cool completely before slicing.
