Cod Coconut Curry 🥥🐟

This recipe is for 3 servings and perfect when you want comfort food without heavy calories.
Ingredients:
• 500 g cod
• 1 medium onion
• 1 bell pepper
• Garlic (to taste)
• 1 can coconut milk
• 80 g red curry paste
• 1 tbsp olive oil
• Cilantro
For the side:
• 1 cup cooked brown rice
• ½ tsp lemon zest
• 1 tbsp vegan butter
How to:
Sauté veggies and fish in olive oil.
Add curry paste and coconut milk.
Simmer for 15–20 minutes.
Serve with brown rice, lemon zest & herbs 🌿
