Ingredients

1 cup fresh tuvar ke daane
1 cup fresh matar
2 green chillies
1-inch ginger
4 tbsp oil
1 tsp jeera
1 tsp saunf
A pinch of hing
Salt to taste
1 tsp jeera powder
2 tsp chaat masala
1 tsp black pepper powder
½ tsp garam masala
1 tsp amchur powder
½ tsp kala namak

Steps to Make Mattu Tikki

1. Add fresh matar, tuvar dana, green chillies and ginger to a grinder. Grind into a coarse paste.

2. Heat 2tbsp oil in a pan. Add jeera, saunf and hing. Let them crackle.

3. Add the coarse matar–tuvar mixture to the pan.

4. Add salt and all the masalas. Kala namak, black pepper powder, jeera powder, chaat masala, garam masala and amchur powder. Mix well.

5. Cook the mixture on low-medium flame for 8–10 minutes, stirring occasionally, till it comes together and dries slightly.

6. Turn off the heat and let the mixture cool completely.

7. Shape the mixture into small tikkis.

8. Heat 2tbsp oil in the same pan and cook the tikkis on both sides till golden brown.

9. Sprinkle chaat masala on top and serve hot with chutney and onion rings.
