Ingredients
Vegetables & Base
●Onion – 2 nos, chopped
●Purple cabbage – ½ no, julienne
●Garlic – 1 tbsp, chopped
●Coriander – as required
●Lettuce – as required
●Binding & Filling
●Soaked black beans – 2 cups
●Boiled potatoes – 4 nos
●Garlic cloves – 6 nos
●Green chilli – 2 nos
●Sauce & Seasoning
●Mayonnaise – ½ cup
●Ginger-garlic paste – ½ tbsp
●Red chilli powder – 1 tsp
●Black pepper powder – 1 tsp
●Lemon juice – 2 tsp
●Salt – to taste
●Coating & Cooking
●Corn flour – 1 cup (for dry coating & slurry)
●Bread crumbs – for coating
●Oil – for shallow frying
●Butter – for toasting
●Bread
●Sourdough bread – as required
Method
1. Wash, peel, and cut all the vegetables as mentioned.
2. In a bowl, mix mayonnaise, ginger-garlic paste, chopped garlic, red chilli powder, black pepper powder, salt, and lemon juice. Keep aside.
3. Coarsely grind the soaked black beans using a chopper.
4. In a mixing bowl, combine mashed potatoes, ground black beans, garlic, green chillies, chopped onions, salt, and lemon juice. Mix well and shape into tikkis.
5. Dry-coat the tikkis with corn flour, dip into corn flour slurry, then coat with bread crumbs. Shallow fry until golden and crisp.
6. Toast the sourdough bread slices in butter until golden.
7. Assembly:
– Spread the prepared mayonnaise on one bread slice.
– Layer with lettuce, onion, purple cabbage, tikki, and more mayonnaise.
– Top with the second slice, press lightly, and serve.
