If you choose to eat more healthy food, the lentils are the perfect vegan recipes for you to start your journey.
This is a quick and super easy recipe, even if you’ve never try to cook before, I’m sure you can make it with this recipe.
Luckily for us the lentils are cheapest and healthiest food available, being well packed with protein, fiber, zinc, iron and antioxidants (making it a superfood).
INGREDIENTS :
– 1.5/2 gbps olive oil
– 1 large onion (or 2 small)
– 1 large carrot (or 2 small ) – grated
– 260 g green lentils (soaked overnight*)
– 680 ml water**
– 2 or 3 tsp salt
– 0.5 tsp black pepper
– 2 or 3 tsp thyme
* If you’re not using soaked lentils then you need to increase the amount of water with 1 or even 2 parts and the timing for cooking will be different .
** The ratio for this recipe is 1 part lentils (soaked) and 2 parts water. I used a big coffee cup for measuring. Be sure you measure the lentils and the water with the same cup.
