These toddler breakfast are simple, vegan and perfect for your picky eater. I included the recipes for the overnight oats and the blender banana panackes. TODDLER MEAL IDEAS
VEGETARIAN DINNER IDEAS FOR THE FAMILY
Blender Banana Pancakes approx 6-8 depending on size
1 1/4c AP Flour
2 Tbsp Sugar
1 Tbsp Baking Powder
1/4 salt
1 Large Banana Ripe
1 Tbsp Coconut Oil
3/4 C of Nut Milk
1 tsp Vanilla Extract
Pour All ingredients into Blender, or into a bowl. Mix up, don’t over mix. Batter will be thick
Drop on medium low heat 1/4cup of batter and wait 2 mins or until it starts to bubble. From here either flip or add in extra toppings such as chocolate chips or fruit
Serve with syrup of choosing.
Great for a freezer stash and pop in toaster when needed!
Overnight Oats
1/2 nut milk or any milk of your choosing
1 tbsp chia seeds
2 tbsp peanut butter
1 tbsp of maple syrup
1 tbsp flaxseed meal (optional)
1/2 rolled oats (recommended)
mix all ingredients into a mason jar incorporate really well. Then add in Oats and flax meal if using; making sure that all the oats are well soaked in milk
Pop on lid and leave till morning.
Portion out the oats into a bowl, or serve in jar adding any toppings you like! Extra milk, peanut butter, syrup or banana would be good!
