Healthy-Protein Packed Chicken Tortilla Soup- So Simple- So Good Easy Recipe



The soup that packs a major punch đŸ„Š of flavor! Dont skip the sautĂ©ing of the onions and garlic and don’t forget ALL of the green add ins!!!! The đŸ‹â€đŸŸ© lime, cilantro 🌿 and đŸ„‘ avocado is YUM in the Tum!!!😋
Chicken Tortilla Soup Recipe:
2.5 pounds of boiled chicken tenders- chopped and shredded
Rinse and dry out pot:
Add in 2 Tbsp olive oil
1/2 chopped onion
2 tsp minced garlic
Sauté on medium until the onion is kind of blackened and the garlic is fragrant
Add in:
1 Can drained whole đŸŒœ corn
1 Can drained and rinsed black beans đŸ«˜
1 Can petite diced tomatoes with jalapeños (juice and all)
1 Box (4 C) chicken broth
Add in :
1 tsp paprika
1 tsp chili (I use Trader Joe’s chili lime)
1 tsp cumin
1-2 tsp salt (your taste)
Stir and bring to a boil
Add in your chopped chicken and let simmer for at least 10 minutes to blend the flavors!
Ladle your soup into your bowls and top with:
Cilantro, avocado and squeeze in some lime juice!!!!
Serve with corn tortilla chips or strips!
