Sweet Bajra Roti | Jaggery Bajra Kakra

Ingredients:
• 1 cup bajra (pearl millet) flour
• ½ cup water
• ½ cup jaggery (crushed or powdered)
• 2–3 tbsp fresh grated coconut
• ¼ tsp cardamom powder
• 1–2 tsp ghee (for dough + roasting)
• Sesame seeds (as needed)
• Extra bajra flour for dusting

Method:
1. In a pan, add water and jaggery. Heat until the jaggery melts completely.
2. Switch off the flame and add cardamom powder.
3. Add bajra flour and fresh grated coconut. Mix well using a spoon.
4. Add a little ghee and bring the mixture together.
5. Once slightly cool, knead into a soft, pliable dough.
6. Take small portions, dust with bajra flour, sprinkle sesame seeds, and gently roll into small rotis.
7. Cook on a hot pan on low flame.
8. Flip and roast both sides using a little ghee until slightly crisp.

Serving Ideas:

• Warm it and add a little ghee for a comforting dessert

Storage:
• Stays fresh for 2–3 days easily
• Traditionally said to last up to 10 days when stored in an airtight container
