This crunchy marinated veggie jar has been living in my fridge all week and I’m obsessed. It’s made with cauliflower, carrots, red onion, olives, and red bell pepper in a mild apple cider vinegar marinade that isn’t too vinegary. Perfect for meal prep, healthy snacking, lunchboxes, cheese boards, or as a side with grilled meats. Stays crisp and flavorful for days and takes just minutes to make!

Ingredients:
Veggies:

3 cups cauliflower florets

1 cup sliced carrots

1 cup diced bell peppers

½ cup olives, sliced

½ cup thin-sliced red onion (optional)

Marinade:

½ cup vinegar (apple cider or white)

¼ cup olive oil

3 Tbsp sugar

1 1/2 tsp kosher salt

½ tsp black pepper

1 tsp dried oregano

2 clove garlic minced

pinch red pepper flakes (optional)

1/4 cup water (to mellow)

Instructions:

Add veggies to bowl or jars.

Whisk marinade and pour over veggies.

Toss, cover, and chill at least 2 hours.

Taste and adjust salt or sugar before serving.
