TURKEY AND SWEET POTATO BREAKFAST BAKE 🍳🍠🧀

Ingredients:
-1 lbs Sweet Potato (453g)
-1 lbs Ground Turkey (453g)
-12 Eggs
-2 Bell Pepper (300g)
-1 Cup Cottage Cheese (200g)
-2 Tsp Salt
-2 Tsp Pepper
-1 Tsp Onion Powder
-1 Tsp Garlic Powder
-1 Tsp Paprika
Instructions:
1.) Preheat oven to 400°F.
2.) Dice sweet potatoes, toss with olive oil, salt & pepper, bake 15–20 min.
3.) Sauté bell peppers 3–4 min, add ground turkey + seasonings, cook until done.
4.) Whisk eggs with cottage cheese (salt & pepper optional).
5.) Combine everything in baking dish, bake 30–40 min until set.
6.) Cool 5 min, divide into 4 containers.
