Blender Magic Muffins
Ingredients
1 medium ripe banana
2 eggs
½ cup unsweetened applesauce
½ teaspoon cinnamon
Pinch of sea salt
1 cup rolled oats
½ cup almond flour
1 teaspoon baking powder
½ teaspoon baking soda
2 tablespoons maple syrup
1 teaspoon vanilla extract
¼ cup hemp hearts
½ cup fresh or frozen blueberries
Directions
Preheat oven to 350°F and grease a mini muffin pan or line with liners.
Add all ingredients except blueberries to a blender and blend until smooth (10–20 seconds).
Fold in blueberries.
Scoop batter into mini muffin pan (about 1½ Tbsp each).
Bake for 22 minutes, or until tops are firm and a toothpick comes out clean.
Cool 5 minutes before transferring to a rack.
DIY Taco Seasoning
1 teaspoon chili powder
1 teaspoon nutritional yeast
1⁄2 teaspoon sea salt
1⁄2 teaspoon garlic powder
1⁄4 teaspoon paprika
1⁄4 teaspoon onion powder
1⁄4 teaspoon coriander
1⁄4 teaspoon oregano
1⁄2 teaspoon cumin
1⁄4 teaspoon coconut sugar
Pinch of black pepper
Homemade Animal Crackers
Ingredients
Wet Ingredients
½ cup unsalted butter, softened
¼ cup coconut sugar
2 tablespoons honey
1 large egg
1 teaspoon vanilla extract
Dry Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
Instructions
In a mixing bowl or stand mixer, cream together the butter, coconut sugar, and honey until smooth and well combined.
Add the egg and vanilla extract and mix until fully incorporated.
Stir in the flour, baking powder, and cinnamon until a dough forms.
Shape the dough into a flattened disc, wrap, and chill in the refrigerator for 30 minutes.
Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
Lightly flour your work surface and roll out half of the dough to about ¼-inch thickness.
Use animal-shaped cookie cutters to cut out cookies and place them on the prepared baking sheets.
Bake for 10–12 minutes, or until lightly golden around the edges.
Transfer to a cooling rack and let cool for 10 minutes before serving.
Crispy Chicken Cutlets
Ingredients
2 skinless, boneless chicken breasts
Salt + black pepper
2 eggs
1/2 cup grated parmesan
1/2 cup panko breadcrumbs
1/2 cup Italian breadcrumbs
*if Italian breadcrumbs are not preseason add dried Italian seasoning and paprika
Avocado oil (for frying)
Directions
Butterfly chicken breasts in half (remove tendon) and pound both sides with a meat tenderizer.
Pat chicken dry with paper towel and season chicken with salt + pepper.
In a shallow bowl, mix parmesan, panko, breadcrumbs and seasoning.
In another shallow bowl, whisk together eggs.
Dip chicken into egg, then coat in breadcrumb mixture.
Heat avocado oil in a pan over medium heat (enough oil to cover the bottom of the pan).
Shallow fry cutlets (2 at a time) until golden and cooked through, about 3–4 minutes per side (165°F internal temp).
