🌾 Bajri Vegetable Paneer Chilla……….

Ingredients
• 1 cup Bajri flour (Pearl millet flour)
• 2 tbsp ginger–garlic–green chili paste
• ½ tsp salt (or to taste)
• ½ tsp ajwain (carom seeds)
• ½ tsp hing (asafoetida)
• Water (as needed, for pouring consistency)
Vegetables & Add-ins
• Green bell pepper (capsicum), finely chopped
• Tomato, finely chopped
• Carrot, grated
• Cabbage, finely grated
• Paneer (cottage cheese), crumbled or grated
👩‍🍳 Method
1. Prepare Batter:
In a bowl, add bajri flour, salt, ajwain, hing, and ginger–garlic–green chili paste.
Gradually add water and whisk to make a smooth, lump-free batter .
2. Add Veggies & Paneer:
Mix in capsicum, tomato, carrot, cabbage, and paneer. Let the batter rest for 5–10 minutes.
3. Cook Chilla:
Heat a non-stick or cast-iron pan and lightly grease it.
Pour a ladle of batter and gently spread it into a round chilla.
4. Flip & Cook:
Drizzle a few drops of oil/ghee. Cook on medium flame until golden, then flip and cook the other side until crisp.
5. Serve Hot:
Serve with green chutney, yogurt, or mint raita.
