Avarekai Dill Idli

Method:

First, take ¼ cup avarekalu (hyacinth beans) and ¼ cup dill leaves.

Heat 1 tablespoon oil in a pan. Add:
• 1 teaspoon cumin seeds
• 1 teaspoon chana dal
• 1 teaspoon urad dal
• ½ teaspoon mustard seeds
• ½ teaspoon hing (asafoetida)
• 2 green chillies

Sauté until aromatic.

Now add 1 cup idli rawa and roast well until it becomes aromatic.

Add the avarekalu and dill leaves and sauté nicely until the raw smell goes away.

Switch off the flame and let the mixture cool slightly.

Add ½ cup curd and salt as per taste. Mix well.
If the rawa absorbs more moisture, add a little water or extra curd to adjust consistency.

Let the batter rest for 30 minutes.

Steam in idli moulds for 15–20 minutes.

Serve hot with chutney.
