Easy Healthy Dinner Idea

This bulgur with chicken is one of my favorite balanced meals. It’s simple, nourishing, and makes the best leftovers.

Bulgur is a staple in the Mediterranean diet. It’s high in fiber and has a low glycemic index, which means it supports steady blood sugar and lasting energy. I cook it like rice and use bone broth for extra protein and flavor.

Bulgur with Chicken
Ingredients:2 tbsp olive oil1/3 cup vermicelli pasta2 cups COARSE bulgur (rinsed and drained)5 cups chicken broth or bone broth1/2 tsp salt1/2 tsp cinnamon1/4 tsp cumin1/4 tsp black pepper

For the mushroom chicken:2 tbsp extra virgin olive oil1 cup chopped onion3 cloves garlic, minced8 oz sliced mushroomsSalt and black pepper to taste2 chicken breasts, cooked and chopped or shredded

Directions:In a large pan, warm the olive oil and toast the vermicelli until golden. Add the rinsed bulgur and stir. Pour in the broth, add all spices and salt, bring to a boil, then cover and simmer on low until the liquid is absorbed and the bulgur is tender.

In another pan, sauté the onion in olive oil until translucent. Add mushrooms and cook a few minutes until softened. Add garlic and cook until fragrant and the liquid cooks out. Season with salt and pepper, then add the cooked chicken.
Mix the mushroom chicken into the cooked bulgur and serve.
