The best ever Salt Bread (Shio Pan) recipe 🤯😍Eggless

Took me a while to post this one but it’s so effing good that even while I’m on a strict fat loss diet, I gobbled two of these 😆& I’m not guilty. This is just wow. Period.

Ingredients –
200 g bread flour
60 g Maida
180 ml cold water
13 g sugar
5 g salt
3.5 g instant yeast
15 g milk powder
20 g cold unsalted butter – for dough

1 tbsp (15g each) butter chunks – 6
Water for brushing
Sea salt

Steps-
1. Add all the ingredients in a stand mixer bowl apart from the cold unsalted butter and knead until smooth.
2. Start adding your butter in small portions and continue kneading until it passes window pane test.
3. Cover & refrigerate overnight.
4. Degas, divide into 6 equal portions and shape into balls. Cover again.
5. Roll one side to shape them into a tear drop shape & then roll it out into a thin sheet (kind of like a long triangle).
6. Place 1 tbsp cold butter cubes on the wider end and roll tightly like a croissant.
7. Cover & proof until doubled (aroud 1-1.5 hours)
8. Preheat the oven to 240 degree C.
9. Drop the temp to 200c, brush the rolls with water and sprinkle with flaky sea salt.
10. Bake for 16-18 mins or until beautifully crispy and brown.
11. Serve immediately!
