Green Superfood Salad with Tahini Kvass Dressing
Ingredients
1.5 cup napa cabbage, chopped
1 cup baby spinach
1/2 cup arugula
1/2 cup cucumber, quartered
1/2 cup celery, quartered
1/2 cup broccoli sprouts (homemade)
Dressing
3 tbsp tahini
2 tbsp apple cider vinegar
2 tbsp fresh lemon juice
1 tbsp extro virgin olive oil or cold-pressed flaxseed oil
1 clove garlic, minced
1 tsp paprika powder
1/4 cup beetroot, pear, date & ginger kvass/juice (optional)
Pinch of black pepper and salt to taste
Instructions
Add the top six salad ingredients into a large bowl.
Combine all dressing ingredients in a separate bowl and whisk until smooth.
Pour dressing over the salad, add a little toasted sesame oil and seeds, toss, mix well, and serve fresh.
