Crunchy Qinua & Chickpea Salad 🥗
Recipe :
1. Take 1 cup cooked quinoa in a bowl. Add 1 tbsp olive oil and ½ tsp light soy sauce. Mix well until evenly coated.
2. Spread the quinoa on baking paper in a single layer. Air-fry at 200°C for 20–25 minutes until crispy. Keep aside.
3. In a large bowl, add 1 cup chickpeas, ½ cup chopped cucumber, and ¼ cup cherry tomatoes (or regular chopped tomatoes). Add the air-fried quinoa on top.
4. For the dressing, in a separate bowl combine 3 tbsp olive oil, ½ tsp vinegar, ½ tsp mustard, salt and pepper to taste, oregano to taste, and 4–5 chopped garlic cloves. Mix well.
5. Pour the dressing over the salad, toss everything nicely, and enjoy!
