LAY HO MA everyone! It sounds so strange to replace that delicious fluffy rice with cauliflower, but let me tell you…it is absolutely incredible! You can buy pre-riced cauliflower or do it easily at home. Join me in this episode and learn how to make cauliflower fried rice. Let’s begin.

Ingredients:
2 generous cups riced cauliflower
1/2 cup diced carrot
2-3 pieces garlic
3-4 tbsp grapeseed oil
1/2 cup frozen peas
1/2 cup frozen corn
1 tbsp sesame oil
2 tbsp soy sauce
1/4 cup fresh chopped green onion

Directions:
1. chop the cauliflower into small pieces. If using a blender, rice only a few at a time
2. blend the cauliflower on the lowest setting (do this in small batches)
3. chop the carrot into small cubes. Then, finely chop the garlic
4. heat up a sauté pan on medium high heat. Then, add the grapeseed oil
5. add the garlic, cauliflower rice, carrot, peas, and corn
6. sauté for 1-2min, then add the sesame oil, soy sauce, and green onion
7. sauté for another minute. Serve and enjoy!
