1 cauliflower
low-calorie cooking spray
1 onion
1 red pepper
2 garlic cloves
4 tomatoes, skinned and chopped
30g of cheese (1 healthy extra A portion keeps the recipe Syn FREE)

Slice the cauliflower into ‘steaks’ (1 inch slices) and place on a baking tray that has been lined with greaseproof paper. Spray with low calorie cooking spray and bake at 180°C for 30 minutes.
Spray a saucepan with low calorie cooking spray and place a finely diced onion and red pepper into it, cook gently until softened. Add the garlic cloves, chopped tomatoes and cook for a further 5 minutes. Season to taste.
Once the cauliflower steaks have softened and cooked, put them onto a serving plate and top with the tomato sauce and sprinkle with your Healthy Extra ‘a’ choice of cheese. Put them back in the oven for 5-10 minutes until the cheese has melted. Top with basil leaves and serve.
