Ingredients
2 cups baby spinach
2 cups arugula
1 ripe avocado, sliced
½ cup cucumber, sliced
½ cup parmesan or feta cheese
2 tbsp pumpkin seeds
1 cup fresh orange or grapefruit segments
2 tbsp olive oil
1 tbsp fresh lemon juice
Sea salt & cracked black pepper, to taste

Instructions
Add spinach and arugula to a large bowl.

Top with avocado, cucumber, radishes, pumpkin seeds, and citrus segments.

Drizzle with olive oil and lemon juice.

Season with salt and pepper and gently toss.

Serve immediately for best texture.

Dressing

1 tsp Dijon mustard

Instructions
Add greens to a large bowl and top with protein, blueberries, nuts, cheese, and red onion.

Whisk all dressing ingredients in a small bowl until emulsified.

Drizzle dressing over salad and toss gently to combine.

Ingredients
4 cups chopped kale (or romaine)
1 tbsp olive oil (for massaging kale)
8 oz grilled chicken or 4 hard-boiled eggs, sliced

1 carrot, ribboned

2 tbsp pecans, roughly chopped

Creamy Green Goddess Dressing (or can buy store bought)
½ avocado
3 tbsp olive oil
2 tbsp fresh lemon juice
1 small garlic clove
¼ cup fresh herbs (parsley and cilantro)
Sea salt, to taste
Water, 1–2 tbsp as needed for blending

Instructions
If using kale, place it in a bowl with 1 tbsp olive oil and massage for 1–2 minutes until tender.

Add chicken (or eggs), avocado, celery, herbs, and hemp seeds.

Blend all dressing ingredients until smooth and creamy.

Drizzle dressing over salad and toss to coat evenly.

Serve immediately or chill for 10 minutes to deepen flavor.
