💛BREAKFAST / BOILED EGGS ON TOP OF AVOCADO TOAST (7 sp)
– 1 boiled egg (0 sp)
– 2 slices of toast (4 sp)
– 1/4 of avocado (3 sp)
– salt + pepper

💜LUNCH / FAJITA CHICKEN BAKE WITH CREAMY SLAW
FAJITA CHICKEN BAKE: (1 CUP FOR 3SP)
( made 10 servings, 1 cup is a serving)
– 3 lbs of chicken breast
– 1 can of diced tomatoes with pepper + celery
– 1 packet of 39g of fajita seasoning mix
– 2 lbs potatoes
– 1/2 white onion

♥️CREAMY SLAW: (1/2 CUP FOR 1 SP)
( made 9 servings, 1/2 cup is a serving)
– 1 bag of broccoli slaw
– 2 tbsp lime juice
– cilantro
– green onions
– 1 tbsp diced jalapeno pepper
– 1/3 cup light mayo
– 1/3 cup light sour cream
– salt + pepper

How to make (CHICKEN BAKE):
Step 1 – Add chicken into a dish sprayed with olive oil spray, cut your potatoes into dice size pieces, then cut your half on a white onion into slices, in a bowl add onions and potatoes with fajita seasoning and toss together saving the seasoning for chicken.

Step 2 – In the dish with chicken add some of your fajita mix over the chicken and spread evenly, then add potato mixture on top, add your canned tomatoes, then the rest of your fajita mix on top.

Step 3 – Bake on 435 for 30 minutes, once 30 min is up take our dish and cut your chicken into chunks, then place back in the oven to cook for additional 15 minutes.

How to make (CREAMY SLAW):
Step 1 – Cut your green onions, cilantro, and jalapeno pepper. In a bowl add your slaw, then add your herbs and pepper, 2 tbsp lime juice, next add 1/3 cup light mayo, 1/3 cup light mayo, and your seasonings then toss everything together until slaw is coated well.

💚DINNER / CREAMY MUSHROOM SOUP
MUSHROOM SOUP: ( 1 1/3 CUP FOR 3SP)
(made 8 servings, 1 1/3 cups is a serving)
– 1 can of 10.5 oz cream of mushroom soup
– 16 oz baby bella mushrooms
– 1 cup diced white onion
– 1 tbsp minced garlic in oil
– 1/2 cup unsweetened oat milk
– spray butter
– 3 cups vegetable broth (for soup)
– 1/3 cup vegetable broth ( for gravy)
– 16 oz 93 7 lean ground turkey
– head of kale
– 3 tbsp white flour
– 1/2 cup water into the soup
– 1/3 cup (add more if needed) water into mushroom gravy
Seasonings:
salt + pepper, garlic powder, dry thyme, dry basil

How to make: SOUP
Step 1 – Cut your mushrooms, onions, and kale. In a skillet add 1 tbsp minced garlic and your onions cook until soft and light brown, then add your ground turkey, and seasonings.

Step 2 – Add your mushrooms next, can of mushrooms soup, and 1/2 cup water. Place your lid on your pot and cook until mushrooms soften.

Step 3 – Add your 3 cups broth into the pot, then add your kale, your gravy you made separately, and 1/2 cup unsweetened oat milk.

Step 4 – Once everything is in the pot add lid back on and simmer on low for 15 minutes.

How to make: GRAVY
Step 1 – Add about 5 mushrooms into a separate skillet sprayed with olive oil spray, then add 3 tbsp white flour, 1/3 cup
vegetable broth, and 1/3 cup water, whisk together until smooth. Then add into the soup.
