Veg cheese paratha is a great option for breakfast, brunch and lunch. It is super yummy dish stuffed with cheese, paneer and lots of veggies, which makes it really healthy. It can be a complete meal as it is a combination of protein, carbohydrates, fats and fibres.
Use of ghee makes it really healthy because a good healthy fat is important for digestion.
Paneer is rich in protein, vegetables like peas, corns, carrot, capsicum are good source of fibres.
You can enjoy this paratha with any chutney or simply tomato ketchup. Ingredients and instructions for this recipe are listed down.

Ingredients:-
For making dough –
1 cup – Whole wheat flour
1/2 tsp – Salt
1 tsp – Oil
Half cup – Water
For making stuffing –
1/4 cup – Mashed paneer
1/4 cup – Grated carrot
1/4 cup – Boiled & mashed peas
1/4 cup – Boiled corn
1 small – Capsicum
1 small – Chopped onion
1-2 no’s. – Green chillies
1 tbsp – Coriander
1/2 tsp – Salt
1/2 cup – Grated cheese
Ghee – As per requirement
Instructions:-
1. In a bowl, add whole wheat flour, salt and oil. Mix everything well. Add water to make a soft dough. Cover this dough with napkin and let it rest for 10 minutes.
2. In another bowl, add mashed paneer, chopped onion, grated carrot, chopped capsicum, boiled corn kernels, boiled & mashed peas, green chilli, coriander, salt and grated cheese. Mix everything well with each other and keep aside.
3. Now make small balls from dough and roll it to make small roti.
4. Put some amount of stuffing on roti and close all the ends to make a stuffed ball.
5. Flatten the stuffed ball, sprinkle some flour on it and roll it by applying low pressure.
6. When raw paratha is ready, put some ghee on tawa, and then put this raw paratha on to the tawa and roast it well from both the sides. Use ghee as per requirement.
And yummy, delicious veg cheese paratha is ready to serve.
