Are you trying to stay healthy during the holidays? Many people are. There are some simple things that you can do to keep your healthy weight goals even during the holidays. Before every holiday party or dinner, have a good nutrient dense salad on hand and start your meal with a heaping plate of one of these delicious salad ideas. Then after that, enjoy a moderate plate of some of the foods you enjoy. By filling up on the good stuff first, we are less likely to eat large amounts of the things that are not quite as healthful.

Israeli Chop Chop Salad
1 cucumber chopped into fine cubes (this can be pealed or not)
2 Roma tomatoes chopped into cubes
4-5 radishes (optional) chopped into small cubes
the juice of one lemon
1 small avocado (optional) chopped fine
a pinch of sea salt
Note: you can chop many types of veggies, and even add brown rice and canned chickpeas to this dish, to create a nutrient dense salad with no added oil.

Dr. Whimsy’s Infamous Chop Chop Salad
2 cups of chopped salad (do NOT use Iceberg)
1/2 cup of shredded cabbage
2 roma tomatoes chopped fine
1 cucumber chopped fine
3 spring onions chop and use the whole onion
1 avocado chopped fine
5 – 6 radishes chopped fine
1 cup of cooked brown rice
1 can of garbanzo beans
1/2 cup of raisons
1/2 cup of nuts (toasted sunflower, chopped walnuts or almonds work)
Dressing
2 – 3 TBL of Extra Virgin Olive Oil (add more if needed)
2 – 3 TBL of Apple Cider Vinegar (add more to taste if needed)
Sea-Salt to taste
Optional spices
garlic powder
sage
rosemary
