Zero-Oil Steamed Chicken Koftas (Ramadan Prep Friendly)
These soft and juicy steamed chicken koftas are a healthier alternative to deep-fried versions. They use zero oil for cooking, stay tender, and can be frozen for up to a month. Perfect for quick Ramadan meals—just add to any gravy and your dish is ready in minutes.
Ingredients
2 bread slices
Water (for soaking bread)
500 g chicken thigh pieces (boneless)
2–3 green chilies
½ cup fresh mint leaves
½ cup fresh coriander leaves
Salt to taste
1 tsp red chili powder
1 tsp chicken masala
1 tsp coriander powder
¼ tsp turmeric powder
½ tsp amchur (dry mango) powder
½ tsp chili flakes
1 tbsp ginger-garlic paste
1 small onion, chopped
2 tbsp corn flour
1 tbsp ghee
Method
1️⃣ Soak bread in water and squeeze out all moisture.
2️⃣ Blend soaked bread, chicken, green chilies, mint, coriander, salt, spices, ginger-garlic paste, onion, corn flour, and ghee into a thick paste.
3️⃣ Shape into small koftas.
4️⃣ Steam for 5–6 minutes until cooked (use a steamer or plate-over-bowl method in a pot).
5️⃣ Use immediately or cool and freeze for up to 1 month.
6️⃣ Add to hot gravy when needed and simmer briefly.
