Today I am sharing a quick n easy, healthy weightloss recipe “Tomato & Beetroot Soup”. Within 10 to 15 mins we can prepare this tasty and healthy soup. We all know Tomatoes are the major dietary source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. Tomatoes are a good source of several vitamins and minerals like Vitamin C, K1, B9 (Folate i.e., important for normal tissue growth and cell function).
Beetroots also packed with essential vitamins, minerals and plant compounds, some of which have medicinal properties. It has many nutrients with less calories. Good to keep in blood pressure in check. Helps to reduce risk of heart disease like heart attack, stroke and failure. May help to increase the digestive health as well as liver, brain health. It has anti-cancer properties. Also helps to reduce weightloss and diabetic friendly. Diatery nutrients of Beets can increase the athletic performance.

How to make Tomato & Beetroot Soup:
Tomato – 1 cup (chopped)
Beetroot – ¼ cup
Water – 2 glasses
Curry leaves – few (Optional)
Coriander leaves – few (chopped) (optional)
Coriander powder – ¼ tsp
Pepper powder – ¼ tsp or less
Salt (as per taste)
Lemon juice – few drops (optional)
How to Prepare Healthy Soup:
1) Take a pressure cooker.
2) Add tomato and beetroot pieces into it.
3) Add ¼ glass of water. Cook for 1 whistle.
4) Remove from the pressure cooker. Let it cool completely.
5) Place all the cooked veggies into a mixer jar and blend into a smooth paste.
6) Take a pan or sauce pot.
7) Pour blended puree into it.
8) Add 1 or 2 glasses or water to this puree.
9) If you want thick consistency add 1 or ½ glass of water. Otherwise, add 2 glasses of water for pouring consistency. I add 2 glasses of water. I want to have it before dinner.
10) Next add fresh curry leaves, freshly grounded pepper powder, coriander powder and salt. Bring to boil for 5 minutes on low flame.
11) Now turn-off the flame.
12) Add a handful of coriander leaves (finely chopped).
13) Mix well and serve in a bowl.
14) Have a healthy and tasty soup.
15) If you like…. Add few drops of lemon juice into it.
16) Enjoy.
