BEEFY BLACK BEAN BURRITO BOWL RECIPE:
-1/2 Onion (diced)
-1/2 Bell Pepper (diced)
-3 cloves of Garlic (finely diced)
-1 lb Ground Beef (80/20 or leaner)
(can sub ground turkey or meatless crumbles)
-1 can Black Beans (rinsed and drained)
-1 packet low sodium Taco Seasoning
-1/2 C cooked Brown Rice (I used the microwavable pouch)
(Can sub for lettuce or Quinoa)
-Handful of tortilla chips

DIRECTIONS:
Add onion, bell pepper, and ground beef to skillet. Cook until there is no pink left on ground beef. Drain excess oil using a strainer. Add garlic, taco seasoning, and black beans to ground beef and cook for another 3 mins. Add brown rice and tortilla chips to bowl. Top with ground beef mixture. Top with all your favorite burrito toppings.
TOPPING IDEAS: avocado, salsa, jalapeño, cheese, plain green yogurt, cilantro, lemon..ect
