This recipe is amazingly low calorie, while at the same time being surprisingly filling. This is a recipe where you can change the final texture by changing the length of the cooking time. If you cook the fritters just until browned, the fritters will have a pancake-like consistency, and could even be used as a healthier alternative to a pancake. I, personally, prefer a crispier fritter and opt for the longer cook time. That being said, I ended up making the video with the pancake-like texture as it was the quicker and easier of the two.

PREP TIME: approximately 5 minutes
COOK TIME: a few minutes per fritter, on each side

Note: This is definitely a recipe where having either a stove-top griddle or an electric griddle is an advantage and will significantly reduce the overall total cook time as compared to cooking in a non-stick frying pan. When I make this recipe, using my electric griddle, it takes me around 15 to 20 minutes to complete the recipe from start to finish.

3 dollops of sour cream (the caloric count is based on 3 tablespoons)
