Cook time 6+ hours
Makes 12-15 squares

Ingredients:
180 g pitted dates (or 200g with stones in)
100g unsweetened nut butter
100g 70% dark chocolate
1 tbsp olive oil
Pinch of sea salt
50g mix of nuts of choice (I used pistachio nuts, hazelnuts, walnuts)

Method:
– Line a baking tray with baking parchment. Lay the dates next to one another on the tray in rows of 5. Press down firmly on the dates to flatten them, making sure there are no gaps left in between.
– If the nut butter is too solid, give it 10 seconds in the microwave to soften. Spread it all over the dates.
– Put the chocolate in a bowl and melt in the microwave in 40-second blasts, stirring the chocolate each time. When ready, add the olive oil.
– Pour over the nut butter and spread out in an even layer. Sprinkle the sea salt all over, followed by the nuts. Freeze for 30 minutes, then cut into squares. Store in the fridge.
