Ingredients
1 cup Cooked quinoa ~ 200gm
150 gm boiled chickpeas
60 gm carrots
70 gm lettuce
70 gm cucumbers
6 cherry tomatoes halves
1 tbsp olive oil
1/2 lime juice
Salt & pepper
100 gm roasted tofu per serve
5 gm feta cheese per serve
5-6 cranberries & 3 gm pumpkin seeds per serve

Method :

2. Add boiled quinoa, chickpeas and all the veggies in a bowl along with salad dressing ingredients. Mix everything well.
3. Serve it or you can do meal prep and enjoy it during lunch or dinner during busy days.
