Eggless Ragi Waffles | Crispy Outside Soft Inside | No Maida | Jaggery Healthy Breakfast

Try these crispy Ragi Waffles made with jaggery powder, rice flour and cornflour. They turn perfectly crispy outside and soft inside — just like bakery style waffles at home.

This easy homemade waffle recipe uses finger millet (ragi), milk and natural sweetener. No eggs, no maida, no refined sugar.

🌾 INGREDIENTS (10 Waffles)

🥣 Dry Ingredients

Ragi flour – 150 grams (1 cup+3tbsp)

Rice flour – 30 grams (2 tbsp)

Cornflour – 20 grams (2 tbsp)

Jaggery powder – 40 grams (3 tbsp)

Baking powder – 5 grams (1 tsp)

Baking soda – 1 gram (¼ tsp)

Salt – 1 gram (pinch)

🥛 Wet Ingredients

Milk – 240 ml (1 cup)

Vinegar / Lemon juice – 15 ml (1 tbsp)

Oil or melted butter – 30 ml (2 tbsp)

vanilla extract 1/2 tsp

👨‍🍳 INSTRUCTIONS

Step 1 – Make Buttermilk

Mix milk + vinegar. Rest for 5 minutes.

Step 2 – Mix Dry Ingredients

Whisk ragi flour, rice flour, cornflour, jaggery powder, baking powder, baking soda and salt.
Sieve once for smooth texture.

Step 3 – Combine

Add buttermilk, melted butter (or oil) and vanilla.
Mix gently until smooth.

Consistency:
✔ Thick but pourable
✔ Slightly thinner than idli batter

Rest batter for 8–10 minutes.

Step 4 – Cook

Preheat waffle maker well.
Grease lightly.
Pour about 50–60 grams batter per waffle.
Cook 5–6 minutes until crispy and golden.

Do not open early — wait until steam reduces.

✔ Rice flour gives crisp texture
✔ Cornflour makes inside soft
✔ Cook 1 extra minute for deep crisp
✔ Cool on wire rack (don’t stack hot waffles)
✔ Reheat in toaster for crispiness again
