Smashed sweet potato pizza – topped mine with pesto, tomato, basil, mozzarella and chicken for added protein. So delicious!
Sweet Potato Base:
1 sweet potato
Olive oil
Sea salt
Toppings
1/2 tbsp pesto
5 grape tomatoes, halved
150 g cooked chicken breast, shredded
2 tbsp fresh basil, chopped
1/4 cup grated mozzarella
To Finish
Chopped chives
Hot honey
Method
1. Preheat oven to 200°C. Place sweet potato on a lined tray, pierce all over with a fork, drizzle with olive oil, sprinkle with sea salt and bake for 45 minutes or until tender.
2. While warm, cut in half lengthways. Place one half skin-side down between two sheets of baking paper and press firmly with the base of a frypan until 0.5–1 cm thick.
3. Spread with pesto. Top with tomatoes, chicken, basil and mozzarella.
4. Return to oven and bake for 10 minutes or until cheese is golden.
5. Finish with chives and a drizzle of hot honey.
