🥣 Ingredients
1 ½ cups shelled edamame (cooked)
1 cup cherry tomatoes, halved
1 cucumber, diced
2 tbsp feta cheese (optional)
1–2 tbsp olive oil
Juice of ½ lemon
Salt & black pepper to taste
Fresh parsley or herbs, chopped

1️⃣ Prepare the Edamame
If frozen, cook according to package instructions.
Drain and let cool slightly.
2️⃣ Combine Vegetables
In a bowl, add edamame, cucumber, and tomatoes.
3️⃣ Dress the Salad
Drizzle olive oil and fresh lemon juice.
Season with salt and black pepper.
Mix gently.
4️⃣ Finish
Add chopped herbs and feta if using.
Toss lightly and serve fresh.
