Ingredients:
-3 lbs Chicken Breast (1,360g)
-1 Onion
-2 Bell Pepper
-60g Honey
-1: 7oz Can Chipotle Peppers in Adobo Sauce (199g)
-2 Cups Reduced Fat Mexican Cheese (224g)
-1 Tbsp Garlic Powder
-1 Tbsp Paprika
-1 Tbsp Pepper
-2 Tsp Salt
-8 Cups Cooked Rice
Sauce:
-1 Cup Fat Free Cottage Cheese (225g)
-1 Cup Tomato Sauce (240g)
-1/2 Cup Almond Milk (120mL)
-2 Tbsp Minced Garlic
-Juice of 1 Lime
Instructions:
1.) Add chicken, seasonings, peppers, onion, adobo sauce, and honey to crockpot; cook high 3–4 hrs.
2.) Blend sauce ingredients near the end.
3.) Shred chicken, add cheese and sauce; mix.
4.) Portion with rice into containers.
5.) Enjoy now or store.
