We are always looking for healthy alternatives for us & the kids! Here’s an easy way to still enjoy birthday cupcakes without feeling guilty.
Grab a pack of Almond Flour Chocolate Muffin & Cake mix. Follow directions as listed – all you need are eggs, melted coconut oil, water & vanilla. For the icing I tried a new homemade recipe, and wow 👀 this will be our new go to! It’s so easy and SO good!
Cream Cheese Icing:
– 8oz block of cream cheese (room temperature)
– 1/4 cup plain Greek yogurt
– 1/4 cup pure maple syrup
– 1 tsp vanilla
Blend everything together with a mixer, top on cupcakes (once they’ve cooled) or store in fridge until you’re ready to use.
