🥦 Broccoli Salad Recipe

🧂 Ingredients
• ¼ cup finely chopped carrot
• ¼ cup finely chopped cucumber
• ½ cup cooked red kidney beans
• ¼ cup orange slices
• 1 cup blanched broccoli
• Salt to taste
• 1 tbsp pecans
🍊 For the Dressing
• 3 tbsp fresh orange juice
• 1 tbsp olive oil
• 1 tsp chaat masala
• 1 tsp pepper powder
• 1 tbsp chopped fresh coriander
🥗 Method
1. In a bowl, mix together orange juice, olive oil, chaat masala, pepper, and coriander to make the dressing.
2. In another large bowl, add carrot, cucumber, kidney beans, orange, and broccoli.
3. Sprinkle salt as needed.
4. Pour the dressing over the salad and toss well to combine.
5. Top with pecans and serve fresh.
💡 Notes
• You can substitute red kidney beans with chickpeas, edamame, peas, black-eyed beans, or mochai.
• If you prefer a tangier flavor, replace orange juice with 1 tbsp lemon juice in the dressing.
