Making roast root vegetables is a quick and easy way to prepare a healthy side dish for any combination of meals during the week. The sweet potatoes, carrots and beets are healthy carbs packed with nutrients that are worth the roasting process. And the best thing is that these roast vegetables will keep in the fridge for 3-4 days; perfect for meal-prep!
