This delicious citrusy and herby chickpea quinoa salad recipe is gluten-free, dairy-free, and jam-packed with fiber, plant-based protein as well as good fats to keep you satiated and your energy levels balanced throughout the day!

Ingredients

Salad
• 2 cups cooked chickpeas (1 cup dry chickpeas)
• 3 cups cooked quinoa (1.5 cups dry quinoa – any colour)
• ¼ cup red onion, chopped
• 1 medium tomato, chopped
• ½ large-size cucumber, chopped
• ½ red bell pepper, diced
• ½ green bell pepper, diced

Garnish
• ½ cup cilantro, chopped
• 6 mint leaves, chopped
• 4 sprigs of green onions, chopped
• 10 kalamata olives, pitted and sliced

Salad Dressing
• Juice of 1 lemon, freshly squeezed for maximum flavor
• 1 tsp Italian seasoning
• ½ tbsp cumin powder
• 1 tsp garlic powder
• 1 tsp red chili flakes
• 3 tbsp extra virgin olive oil
• ½ tsp Himalayan pink salt
• Freshly ground black pepper, to taste

Instructions
1. Soak the chickpeas overnight or for 8 – 12 hours, and soak the quinoa for 6 – 8 hours
2. Drain and rinse the chickpeas. Add the chickpeas to your Instant Pot and cook for 12 minutes on the Pressure Cook Setting (for a regular pressure cooker, follow your pressure cookers direction on cooking chickpeas)
3. Drain and rinse the quinoa. Add the rinsed quinoa to a pot with 3 cups of water. Bring the water to a boil, add 1 tsp of himalayn pink salt, and simmer for 10 minutes. Switch off the flame and let the quinoa sit for 5 minutes. Fluff with a fork once cooked
5. Add the salad dressing ingredients to a mason jar and give it a shake or add to a bowl and mix
4. Mix all the salad ingredients in a large bowl (or use the same Instant Pot you used to cook the chickpeas as shown in the video, and avoid washing 1 more dish)
5. Add the salad dressing and the garnish ingredients and give the salad a final toss
6. Serve warm or chilled
