(ad) Banana Bread Energy Balls 🍌🍫

I made these energy balls with @glebefarmfoods gluten free porridge oats, which help keep me feeling satisfied for longer while also boosting my daily fibre intake.👏🏻
Makes (8 large or 12-14 small energy balls)
Ingredients:
🍌120g Glebe Farm PureOaty gluten free porridge oats, blended into a fine oat flour
🍫30g vegan vanilla protein powder (can sub for another 30g of oat flour)
🍌1 tsp cinnamon
🍫Pinch of flaky salt
🍌1 overripe banana
🍫150g smooth peanut butter
🍌60ml maple syrup or agave
🍫40g chopped nuts or chocolate chips (I added chopped walnuts)
🍌150g dark chocolate
🍫1/2 tsp coconut oil
🍌Optional – 8 banana chips for the topping, 50g vegan white chocolate.
Method:
1. Add the gluten free oats to a blender or food processor and blitz until you have a fine oat flour.
2. Add the banana to a mixing bowl and mash with a fork. Add the peanut butter, maple syrup, salt, cinnamon, protein powder and oat flour and combine until you have a dough-like consistency.
3. Fold in the chopped walnuts, then divide the mixture evenly and roll into balls.
4. Add dark chocolate and coconut oil into a bowl and melt until completely smooth. Dip each ball into the chocolate, making sure they’re fully covered and transfer to a lined tray.
5. Put these in the fridge or freezer for 20-30 minutes or until the chocolate has set.
6. Optional – melt white chocolate and drizzle a small amount on top of each energy ball and place a banana chip on top. Put in the fridge for a further 20-30 minutes before serving.
