Oil-free roasted cauliflower – crispy on the outside and tender on the inside
A mix of spices, panko, and cheese turns it into a healthy yet incredibly tasty dinner or snack.

Ingredients:
• Cauliflower
• 100 g panko breadcrumbs
• 70 g mozzarella or suluguni cheese
• 3 eggs
• 3 tbsp low-fat mayonnaise
• 1 tsp paprika
• 1 tsp dried garlic
• 0.5 tsp black pepper
• 0.5 tsp salt
• Sour cream and fresh dill or parsley (for serving)
Instructions:
Separate the cauliflower into florets.
Add salt to cold water and place the florets in it.
After boiling, cook for 3 minutes, then drain.
In a bowl, mix eggs and mayonnaise.
In another bowl, combine panko, grated cheese, and spices.
Dip the florets into the egg mixture, then coat with breadcrumbs.
Place on a baking tray lined with parchment paper.
Lightly drizzle with olive oil if desired.
Bake at 220°C for 20 minutes until golden and crispy.
Serve with sour cream and fresh herbs.
