This Cottage Cheese Egg Salad is creamy, fresh, and packed with protein to keep you full longer. Cottage cheese adds a lighter, tangy twist to classic egg salad while boosting nutrition. Perfect for quick lunches, meal prep, or an easy high-protein snack.

Ingredients:
•4 hard-boiled eggs, coarsely chopped
•1 cup low-fat cottage cheese
•1 1/2 Tbsp reduced-fat mayonnaise
•1 tsp Dijon mustard
•1/4 tsp dried dill
•1 Tbsp fresh parsley, chopped
•1 tsp lemon juice
•2 Tbsp chives, chopped (for garnish)
•Ground black pepper, to taste
•2 slices whole wheat bread (or lettuce for wraps)
Instructions:
1️⃣ In a bowl, combine chopped eggs, cottage cheese, mayonnaise, Dijon mustard, dill, parsley, lemon juice, and black pepper.
2️⃣ Stir until evenly mixed and creamy.
3️⃣ Toast whole wheat bread if desired, or prepare lettuce leaves for wraps.
4️⃣ Spoon egg salad evenly onto toast or into lettuce wraps.
5️⃣ Garnish with fresh chives and serve immediately.
