Crunchy Carrot Corn Salad Recipe
Ingredients:
4 carrots (400g)
1 can corn (200g)
50g walnuts, roughly chopped
Small bunch cilantro, chopped
3–4 tbsp lemon juice
1.5-2 tbsp olive oil
Salt & pepper to taste
Instructions
1️⃣ Grate the carrots into a bowl
2️⃣ Add drained corn
3️⃣ Add chopped walnuts and cilantro
