We often do not have enough time to make nice breakfast during the weekdays. But once a while, it is nice to spend some time during the weekend mornings to make some delicious breakfast/brunch.
This open sandwich toast is very simple to make and does not cost too much time to make, but contains a lot of protein, fibres from vegi and nuts
Recipe:
– 1 whole Burrata cheese
– 1 slice of baguette or any bread you like
– home made garlic confit (1 whole garlic bulb, peeled. Enough olive oil to cover the garlic cloves in a small baking dish. Slowly cook the garlic in the oven at 160 c until golden)
– home made pesto ( 25g basil, 60g roasted pine nuts)
– Tomato slices (add as much/less as you like) & small amount leafy greens for topping
– salt & pepper to your taste
