Recipe: Creamy Tomato Protein Pasta

Ingredients:
1 boursin cheese round (garlic and herb)
1-1.5lbs cherry tomatoes
2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1/2 tsp red pepper flakes (optional – I included this in ours, not for the families because both moms were nursing)

Chicken:
1-2 lbs boneless skinless chicken breast (tenderized thinly)
2 tbsp olive oil
1 tsp salt
1 tsp Italian seasoning
1/2 tsp garlic powder

Protein pasta – I LOVE the Goodles brand. It tastes like regular pasta.

Topping: Parmesan cheese – measure with your heart.
Method:
Preheat oven to 425 F
In a small baking dish add tomatoes, coat them with olive oil and then place the cheese directly in the middle.
Bake for about 1 hour until tomatoes have burst and released juice.
Mix cheese and tomatoes together to form a sauce.
Cook pasta according to package directions (remove about 1 cup of pasta water in case you need to thin the sauce)
Chicken:
To a bag or bowl add chicken and season with olive oil, Italian seasoning, garlic powder and salt. Mix until evenly coated.
Grill until cooked through, or use your method of choice for cooking chicken (pan/air fryer/etc).
Assemble and enjoy!
