Fruit and Vegetable Salad with Low Calorie Thousand Island Dressing

Fruit and Vegetable Salad with low calorie Thousand Island dressing, not just for weight-watchers, but for everybody.This delicious salad also contains all the vitamins A and C needed for the eyes and a glowing complexion. Eating raw fruits and vegetables preserves both fibre and other nutrients.

Preparation Time: 10 minutes.
Cooking Time : Nil.
Serves 4.

For the fruit and vegetable salad
1 cup iceberg lettuce, torn into pieces
¼ cup capsicum cubes
½ cup grated carrot
2 tbsp finely chopped celery (ajmoda)
2 cups apple cubes
½ cup orange segments, cut into halves
2 tbsp chopped raisins (kismis), optional

To be Mixed Together into a Low-Calorie Thousand Island Dressing
½ cup hung low-fat curds (dahi), refer handy tip
1½ tbsp tomato ketchup
1 tsp chilli sauce
1 tsp sugar
¼ tsp mustard (rai / sarson) powder
2 tsp finely chopped onions
2 tsp finely chopped capsicum
1 tsp finely chopped green chillies
Salt to taste
2 tbsp low-fat milk 99.7% fat-free

1. Combine all the ingredients for the vegetable and fruit salad in a deep bowl, add the low-calorie thousand island dressing and toss well.
2. Serve immediately.

Handy tip : 1 cup of low-fat curds gives ½ cup of hung low-fat curds.
