Ricotta Zucchini Rolls

These soft, cheesy zucchini rolls are light, flavorful, and perfect as a cozy snack or meal.

Ingredients
Zucchini
Ricotta
Spinach
Broccoli
Garlic
Garlic powder
Marinara or any tomato-based sauce (no ketchup)I am using store bought
Olive oil
Salt
Cheese (optional, for topping)

Instructions
1. Thinly slice the zucchini lengthwise into long strips.
2. In a bowl, toss the slices with olive oil and garlic powder until well coated.
3. Air fry at 390°F for 8–10 minutes until soft. (You can also cook them on a pan until tender.)
4. In a blender, add boiled broccoli, blanched spinach, ricotta (about 200g), and 2 cloves of garlic. Blend until smooth and creamy. Season with salt.
5. Take a zucchini slice, add a spoonful of the ricotta mixture, and roll it up.
6. Spread a layer of marinara sauce in a pan, place the rolls on top, drizzle with a little olive oil, and sprinkle cheese if using.
7. Cook on the stove for about 10 minutes, then broil on high for 2 minutes until slightly golden.

Serve hot and enjoy! You can have it as is or pair it with some sourdough bread.
