For the Tofu Katsu Sandwich I make a vegan recipe Tonkatsu sauce and bake in the oven until light and crispy rather than frying the tofu katsu. For the roasted vegetable sandwich I up the anti by making another vegan recipe for an olive tapenade that doesn’t use any oil to spread on the vegetable sandwich. This makes for extra tasty vegan sandwich recipes that are irresistible. The Tofu Katsu sandwich also makes for a great addition to vegan protein sandwich recipes.

Tofu Katsu Sandwich (200c 45 – 50mins)
500g Extra Firm Tofu
Flour Coating:
• 1 tablespoon Garlic Powder
• 1 tablespoon All purpose seasoning
• 1 teaspoon Cayenne Pepper
• 1 teaspoon Salt
• ¼ cup Cornstarch or Brown Rice Flour
Yoghurt Coating:
• 100g Yoghurt
• 30g Hotsauce
Breadcrumbs
• 1 cup Panko Breakcrumbs
Tonkatsu Sauce
• ¼ cup Ketchup
• 2 tablespoons Worcestershire sauce
• 1 teaspoon Maple Syrup
• 2 teaspoons Soy Sauce
Roasted Vegetable Sandwich
1 Aubergine, 1 Courgette, Sweet Peppers
• 2 tablespoons Soy Sauce
• ½ tablespoon Worchester Sauce
• 1 teaspoon Mixed Herbs
• ½ teaspoon Smoked Paprika
• ½ teaspoon Garlic Powder
• ½ teaspoon Cayenne Pepper
• ¼ teaspoon Salt
Olive Tapenade Spread:
• 1 cup pitted Olives (150g)
• 2 tablespoons Capers
• 1 tablespoon Tahini
• 2 tablespoons Lemon Juice
• 1 Clove Garlic
• 2 Sundried Tomatoes
These Vegan Sandwich Recipes are great to prepare in advance, marinade the vegetables overnight in the fridge for an even more tasty vegan sandwich recipes. The Tofu katsu sandwich, also referred to as katsu sando in Japanese, is a great way to get that extra protein kick but also make vegan lunch ideas tasty. If you’re new to Tofu, this tofu katsu sandwich recipe is a great introduction, as the crispy panko breadcrumb coating, and the tangy tonkatsu sauce mask the natural texture of tofu. This is also a great lunch idea for kids as making the katsu sandwich is a great way to get them involved in the cooking process, by bread crumbing the tofu.
