Ingredients:
1 14 oz can of black beans
1 14 oz can of cannellini beans
1 cup english cucumber, diced
1 red bell pepper, diced
1/2 red onion diced
Salt
Black pepper
Cumin
Garlic powder
Smoked paprika
Crushed red pepper

Roasted potatoes:
1 sweet potato, cubed
1-2 tbs avocado oil
Black pepper
Salt
Smoked paprika
Cumin

Chipotle sauce:
1/2 cup vegan mayo
2 Chipotle peppers in adobo sauce
1/2 lime juice
1 clove garlic
Salt
Cumin
1-2 tbs plant milk
