Dressing:

1 tbsp honey

1 tbsp olive oil
1 tsp mustard (optional)
Instructions:
Wash and chop the endive, then place it in a large bowl.
Add the sliced apple and crumbled Gorgonzola.
Sprinkle with nuts for crunch.
In a small bowl, whisk together honey, lemon juice, olive oil, and mustard until smooth.
Drizzle the dressing over the salad.
Toss gently and serve immediately.
