If you ask me, in between the butter and sugar, cream and potatoes belongs a healthy salad. No obligatory side salad will do on the Thanksgiving table. You need something delicious and decadent that can stand up to the rest of your holiday menu and this salad with greens, roasted carrots, feta, walnuts and cranberries with a Cumin Lime Vinaigrette is the ticket.

To make this salad for 6-8 people, you’ll need:
* 2 bunches of carrots (about 12-15 carrots, depending on size), washed, trimmed and cut into quarters lengthwise
* 2 tablespoons, plus ½ cup olive oil, divided
* 1/2 teaspoon ground cumin, plus ¾ teaspoon, divided
* ¼ teaspoon salt, plus more to taste
* Zest 1 lime
* Juice of 1 lime, plus 5 tablespoons lime juice (from about 3 limes), divided
* Salt and freshly ground pepper
* 1/3 cup chopped mango, fresh or thawed frozen
* 1 tablespoon chopped shallots
* 1/3 cup fresh cilantro leaves and stems, washed
* 1 11-ounce package Earthbound Farm Power Greens blend, or baby lettuce blend of choice
* 1 cup toasted walnuts
* ½ cup dried cranberries
* ½-3/4 cup crumbled feta, to taste
